It is very important to use a kitchen towel to wipe the meat pieces until they are completely dry. If the meat remains wet, the spices will not stick properly during the marination phase.

To keep the dish healthy, we focus on natural tenderizers and a balanced mix of spices. In a large bowl, mix 200 grams of fresh yoghurt with 2 tablespoons each of ginger and garlic paste. Add 1 tablespoon of chili powder for a kick of heat and half a teaspoon of turmeric powder for its vibrant color and health benefits. Include 1 tablespoon of ground Cumin and 1 tablespoon of aromatic garam masala to provide that signature depth. For a healthier twist, we add finely chopped tomatoes to the mix. In a large pot, bring water to a boil with salt, cinnamon, and cardamom. Add the soaked basmati rice and cook it until it is roughly 70 percent done. The rice should still have a firm bite in the middle. Drain the water completely and spread the rice out to prevent it from overcooking in its own heat.
The Golden Potatoes and Fried Onions
A Kacchi is never complete without the iconic potatoes. Peel 4 or 5 medium potatoes and cut them into halves. Rub them with a little salt and turmeric powder, then pan-fry them in a small amount of oil until they are golden brown. Simultaneously, slice 2 large onions thinly and fry them until they are crispy and brown. Using a controlled amount of oil for these steps keeps the calorie count lower than traditional commercial catering methods.
Layering for the Perfect Aroma
Use a heavy-bottomed pot to ensure the meat does not burn. Brush the bottom with a little oil and spread the marinated Mutton in an even layer. Place the fried potatoes and a handful of fried onions over the meat. Next, layer the par-boiled basmati rice over the top. To finish, you can add a little saffron-infused milk and a few drops of rose water for that authentic wedding fragrance.
The Traditional Dum Cooking Process
The secret to Kacchi is the “Dum” or steam-cooking method. Seal the lid of the pot using a simple dough made of flour and water so that no steam can escape. Place the pot on medium heat for the first 10 minutes to get the internal temperature rising. Then, reduce the heat to the lowest possible setting and let it cook for 60 to 70 minutes. The meat cooks in its own juices along with the yoghurt and tomatoes, resulting in a melt-in-the-mouth texture.
